205mm Gyuto /chefs knife in polat , cocobolo and carbon fibre handle
205mm Gyuto / chefs knife in my polat with some chromium estimated 1.2-1.3 percent carbon ( not stainless , around 64hrc ) last piece of my chromium based polat steel . While it helps with hardening process the patterns come quite subtle compared to my newer chemistry
