Hunter Valley Blades series San Mai gyuto / chefs knife that’s designed for being an all around performer for every tasks . Every component of these knives are made by me in my shop in Japanese style with forged finish and Japanese handles .
Wrought iron and pure nickel clad san mai with 26c3 ( spicy white steel ) high carbon steel core (not stainless, will rust if not wiped dry) around 64-65hrc

Grind : Workhorse suitable for both right and left handed users

Spine thickness: 4mm above the heel , 2.2mm midway , .9mm a cm before the edge
